This wine starts with a sweet aroma followed by dill and cold ashes (a consistent aromatic in the blocks Torii Mor gets from Temperance Hill Vineyard), followed by dark cherry and oak spice notes. The flavors show rich earthiness with dark cherries, dark chocolate, and a long cigar box-oak spice finish. The mouth-feel is thick, rich and medium sweet with a spicy finish. The texture shows rich round tannins which show a little dryness in the long finish. This wine will benefit from a little more cellaring (until summer 2010), or decant and aerate to soften up the tannins.  Enjoy with dishes rich in heavy sauces.
