The 2007 Eola-Amity Hills Select Pinot Noir’s aroma is forward, with herbal notes, dark cherries and floral-vanilla notes.  The flavors display the same herbal note, with a combination of red and dark cherries framed by a strong tannic structure. The finish is long and displays both sweetness and dryness around the core of cherries. The mouth-feel is still tight from the tannins but is not aggressive. This wine will benefit from bottle ageing until the end of 2010, or can be enjoyed sooner with strong aeration by decanting and/or serving with dishes with heavy cream sauces. Cellar 8-10 years.
