Harvest/Crush Report

 

The 2007 crop came in with great flavors and complexity. Try as it might, the rain did not succeed in diluting the flavors, and only a few vineyards had some mild botrytis but nothing severe. The brix levels have been between 21.5 and 23.5. The yield has averaged about two tons per acre, and our crew has processed 232 tons of Pinot Noir, which is Torii Mor’s largest harvest yet.

Crush has gone smoothly in our new facility thanks to all the hard work from the crew. Of course, having new equipment helps, including our Mistral sorting line. Now that the new facility has been broken in, next year should be a breeze, but hopefully a little warmer.
